Opening an Irish restaurant in Ireland may not seem strange, but when chef Pádraic Óg Gallagher opened ‘The Boxty House’ in Dublin’s Temple Bar in 1989, it was visionary and ground-breaking. The notion of Irish food was as undeveloped as the neighbourhood; now however, both have subsequently undergone a renaissance.

It was while cooking on yachts in South America that Pádraic saw people in Venezuela cooking traditional flat breads and was reminded of the boxty potato pancake of his County Leitrim childhood. He set out on a journey of researching and reviving it and other Irish cooking traditions.

He has since become a champion of the Irish potato. He sponsors Dublin Urban Farm, located on the roof of a city centre school, and the Langford/Carey Heritage Potato Collection. As a partner in the Thank Potato project, Pádraic takes the 170 variety potato collection on tour, encouraging people to grow them and celebrating their place in food and farming culture.

Pádraic presented a paper to the Oxford Food Symposium on the Potato in Irish Cuisine, and in 2010 was invited to prepare an Irish Banquet for the gala dinner at that event; a chance to “put Irish food on a world stage”.

Pádraic wants to put Dublin on the food map and believes there is potential to develop “little pockets of food tourism, mini food trails” throughout the city’s neighbourhoods. He recently organised ‘A Taste of Temple Bar’ as part of the Temple Bar Trade Fest, an event which will be repeated in August annually.

He constantly pushes the food agenda through his involvement in tourism and industry fora such as the Restaurants Association of Ireland, Temple Bar Traders, and Grow Dublin Task Alliance. In 2015, Pádraic began his road towards achieving a PhD in Culinary Arts.
