A lecturer at the College of Tourism and Arts at the Galway Mayo Institute of Technology (GMIT), Jacinta has a strong industry background with which she maintains close links.
She co-founded The Foodie Forum, which is now in its second year, and remains actively involved in many food festivals.
Jacinta was selected by Galway County Council for a recent trip to France, alongside a number of artisan food producers, with the objective of marketing Galway as a food tourism destination.
She is passionate about Irish food, and the promotion of local ingredients. Jacinta believes in food education, the power of collaboration and the strength of our food tourism product, and she endeavours to raise the profile of these vital elements whenever possible.
