Anthony has been an artisan food producer for over 30 years, since the day he gave up selling wine and joined his father in the business of smoking salmon. His father had begun the business in the 1970s with salmon he and his friends caught in local rivers.

Today Ummera Smokehouse in West Cork produces certified organic smoked salmon, as well as smoked duck, chicken and bacon, and their mail order customers span the globe.

But wild salmon is where it all began and Anthony was one of four producer founders of the Slowfood Irish Smoked Wild Atlantic Salmon Presidium in an effort to protect that beloved species and their craft.

Along with fellow Fáilte Ireland Food Champion Ruth Healy, he established the Bandon Food Trail and his vision for the future is to work on a food trail that will extend throughout West Cork. He believes that, “If we continue to produce the very best that we can and let people see what we are doing, we really have something”.

Anthony is as honest, forthright and fair as the food he produces and champions. He passionately believes that Ireland has all the ingredients to produce fantastic food that is green and healthy, and to show this to the world in an open and honest way.

He reflects this through environmentally sensitive smokehouse he built and opened to visitors 15 years ago at Ummera.
