    Gearoid is a young man but has already “seen a generation in the industry”. He opened his first restaurant aged 23, and since 2002 he and his wife Tara have run their very successful restaurant with rooms, The Olde Post Inn, in a beautifully renovated 19th century post office in Cloverhill, Cavan. Before that Gearoid trained as a chef at Killybegs and gained experience at renowned restaurants like Le Coq Hardi and Thornton’s in Dublin, Pied a Terre in London and Le Linster, Luxembourg. 

    Living on the family farm in county Cavan, Gearoid grew up with fresh produce like potatoes, cabbage, carrots and rhubarb on the doorstep and he was fond of helping out in the kitchen. When he went on to run his own restaurants to him it was “just right and proper to buy and use local produce”. 

    Having won the Euro-Toques Young Chef of the Year in 2000, Gearoid went on to become a very active member of the organisation and was president of Euro-Toques Ireland from 2011-13. When Fleadh Ceoil na HEireann was hosted in Cavan from 2010-12, attracting 300,000 people to the town, Gearoid organised the food element. Having seen the potential for tourism, Gearoid was amongst four people who sat down together in 2012 to organise the first ‘Taste of Cavan’ event. That year it attracted 1800 people. Three years later, in 2015, it was attended by a crowd of 38,000.

    When Gearoid Lynch does something he does it right, and everything he puts his mind to is a success. He combines a huge love of food with a great business head and massive pride for this county, which is “unspoilt and under-exploited”. He sees immense potential to create a destination in Cavan with food at the centre of it, and believes creating stronger connections from farmer through to hotels and restaurants is key. 

    Gearoid was diagnosed with coeliac disease in 2013. For someone who had dedicated his life to food and cooking this was a tough break, but he took it on as he would any project, turning around his diet and his health without compromising his enjoyment of food and publishing his first book, ‘My Gluten-Free Kitchen’, in 2016.
